I just came back from France using the working holiday Visa, and yes, the Bon Voyage insurance is sufficent, that's what I used. As for the wait for the Visa, I had to mail in my passport to the consulate and they told me it was a 3 - 6 week delay, but I had my pasport mailed back to me in less than 5 days, so I'm sure there's nothing to worry about. I'm not sure if you are aware of what you have to do in France once you do find a job, you have to get the employer to help you out with a temporary work permit by visiting (and I'm not 100% sure the are the initials of the agency) the DDTFP, which is the french ministry of labour. I had no luck trying to work in schools, you need to have a special diploma from the French education system to teach in their public schools, but I did have luck applying for jobs at private language schools, the types of schools that teach companies and other people who want to learn English for their jobs or for help with the TOEIC/TOEFL tests. What you can do is look in the French yellow pages (pagesjaunes.fr) and look up language schools and most of them have websites with contact information. I don't know what area you are going to, but I was in the south of France, so I looked up these schools near Nice or Cannes, all you have to do is type in the department or the city. Just a small warning that if you don't speak French, you should really brush up before you communicate with any companies, usually they don't take fondly to people who can't speak French. A rudimentary knowledge is sufficient.
